Baked Potato Soup

This recipe is found on here which is a recipe blog I love! I recently joined a dinner group so i only cook once a week now and I love using this site for new ideas on what to make. This soup is easy to make and taste great! In Arizona we have to get our soup kick done with since it's getting hot, enjoy!

Baked Potato Soup
4 to 6 potatoes (baked, peeled, and cubed)
½ c. butter
½ c. flour
2 tsp. chicken bullion
salt and pepper to taste
1 tsp. minced garlic
6 c. milk
16 oz. sour cream
10 bacon strips, cooked and crumbled
1 can corn, drained
shredded cheddar cheese

In a large saucepan melt butter on low heat. Stir in flour and seasonings.
Gradually add milk and turn heat up to medium. Add minced garlic. Bring
to a boil, cook and stir 2 minutes until thick. Remove from heat. Whisk
in sour cream. Add potatoes, corn, and bacon. Serve in individual bowls
topped with cheddar cheese.

sounds yummy! i want to hear more about this dinner group that makes it so you only have to cook once a week??? how does that work?

Yea, I want to hear about the dinner group too. I live in AZ too and I am cooking all my soups up too. I will miss them. :)

Hi! So it's pretty much 4 fams in the ward (we are all comparatively the same size, parents and 1 or 2 kids). We each take turns making one big dinner once a week,and make it for the 4 families. It's not something everyone would like but I love it! I don't buy as many ingredients during the week which saves money and I plan my one meal according to what's on sale that week, like chicken was pretty cheap so I made a chicken dish this week. It's also so nice not to have to cook those other nights and not have pots and pans to clean only the dishes you use and the ones they bring food in (which I return when I bring my meal and just put the food I give them in their containers). The one meal day may seem like a lot but if you plan ahead it really doesnt take long at all. We all live really close to each other so dropping off takes not very long. I also love eating different foods and we all know if there is an allergy or if people don't like certain foods ahead of time. Anyways, if you find families that are close to you in location and size it might be totally worth it, like I said I LOVE it and it gives me extra time during the day to focus on other stuff. So Mondays I cook, Tues, wed and Thurs dinner comes to me and Fri is date night. Sat is usually a eat whatever night like leftovers or frozen stuff and Sundays we make a nice small yummy meal for ourselves and go all out on it! ha-ha. Anyways that's all! Let me know what your thoughts are, like I said it's not for everyone, some people love to cook or are really picky (I usually am but have had pretty good luck at liking everything people have brought). Others think its too much work on one day but when that's all you have to worry about all week you kinda figure out the prep ahead of time, anyways enough rambling, hope this helps!!!
