Broccoli

Since our family likes broccoli a lot and it's really cheap at this time of the year I thought that I'd put up a couple of great recipes that have broccoli and are most importantly very easy! The first one is called Speedy Chicken Stirfry, and as the name suggests it was not only really quick to make, but delicious! The next one is a simple alfredo that is also really fast (the recipe for this one below). Rachel was a huge fan of both of these and I think that she might have actually injested some of the broccoli along with the pasta in these two easy dishes. Chicken and Broccoli Alfredo
6 oz. cooked fettuccine
1 c. fresh or frozen broccoli flowerets
2 T butter
1 lbs. chicken breast, cubed
1 can cream of mushroom soup
1/2 c. milk
1/2 c. grated parmesan cheese (I just use the dried stuff and it's fine)
1/4 tsp. pepper

1. Cook pasta and add broccoli for last 4 minutes. Drain.
2. Melt butter and cook chicken until brown.
3. Add soup, milk, cheese, and pepper. Cook through and toss with the pasta and broccoli.

yum, my kids love broccoli so i'm definitely trying these recipes out!
