Chicken Salad

I love chicken salad sandwiches and my cousin, AKA Super Mom (the one with the quints!), gave me this recipe! It has some weird ingredients but is SO good!

My Favorite Chicken Salad Recipe
6 cups cubed cooked chicken breasts (you can also use one big can of chicken from Sam's Club)
1 cup sliced water chestnuts (towel dry from the can)
2 cups chopped celery
1 (20 oz) can crushed pineapple (towel dry)
2 cups red seedless grapes, halved
2 cups slivered almonds
1/2 cup chopped green onion
1/4 cup chutney (this looks like orange marmalade, it's usually in the section with the oriental sauces and salad dressings at the grocery store)
3 cups mayo
2 tablespoons lemon juice
1 tablespoon soy sauce
1/4 teaspoon curry powder (don't leave it out!)

Mix all together in BIG bowl. Serve on bed of lettuce with chow mein noodles on top or in croissants as sandwiches.
