Chicken Salad
It's a no-brainer, but we like to have a fresh salad topped with warm grilled or sauteed chicken. We eat this even though it's winter(technically). The best way I have to get my kids to eat salad is to put all the fixings in different bowls, like cheese, croutons, shredded carrots, lettuce, chicken, tomatoes. Then let them assemble their salads and choice of dressing. It takes just minutes to prepare and is good for you and a change from all those heavy meals. Serve with soup and bread if it's not filling enough(like for my husband, salad is just something he has to eat before the main dish is served).

So I'm curious how you grill/saute your chicken for this? Do you just use leftovers from another meal or do you make it specifically for the salad? Do you season it? What do you saute it in?
I really love the idea of putting all the toppings in different bowls and letting the children build their own salad. Its just like going to the sadad bar at a restaurant. Thank you so much for posting this.
