Disguising Veggies

We've had posts before about picky eaters and tricks to get them to eat vegetables better. (Click Here and Here to see a couple)
My friend Tiffany has a little girl like this who hates veggies so she was wondering if anyone has any good recipes that disguise vegetables?

Well I don't have too much of a problem getting my kids to eat veggies, but for those of you that do, ranch dressing helps!!!

My 2 1/2 yr old will not touch a single veggie! He eats plenty of fruit, protein, and dairy but no vegetables. I offer it to him but he won't touch it. He won't do the dipping thing either. So what do you do??? I got the "Deceptively Delicious" cookbook for Christmas and have tried some of the recipes (all about hiding veggies in food). He wouldn't eat those meals either but he WILL eat Kraft mac N cheese with some pureed sweet potatoes hidden in them. I still need to try some of the other recipes in the book. The concept is great, a lot of prep time though. Some of the recipes in the book taste kinda strange.

Yeah, I have to agree with Christine, some of them do taste kind of weird (my husband called one of my attempts "deceptively disgusting" - he's a sweet guy, don't worry!). But, I've probably said this before, but it gave me a lot of hope when we had a nutritionist in our old ward tell us that you just always put the veggie on their plate and then don't make them eat it (even though our rule is you have to take at least one bite of everything on your plate). If mom and dad and eventually other siblings are eating well, then eventually they will join in too.

My daughter love green beans! But they are very particular about how the eat them. Straight from the can, drained, and cold. Then they did the tips in lemon pepper. It's actually not that bad. I hated green beans all throughout my life, but once I started eating them unheated out of the can with lemon pepper I decided I don't mind them. My girls (4 yrs and 2 yrs) will eat one can for lunch!

Other than that I can sometimes hide chopped veggied in Scrambled eggs. Or in pasta sauce!

Our favorite breakfast food is "Pumpkin Pie Pancakes" or pumpkin french toast. I add a scoop of canned pumpkin to the pankake batter or the eggs for the french toast and sprinkle in a bit of pumpkin pie spice. YUMMY!!!!! And we use natural unsweetened applesauce instead of syrup.

Sorry about my typos! I also wanted to mention that I tried the green eggs from the Deceptively Delicious book for St Patty's day. I couldn't choke it down, but my girls LOVED the idea of eating green eggs and the ate theirs plus mine! It didn't taste too bad, but I like my eggs yellow!

Also, I do have to agree that the preparations take a while, but I started to puree canned veggies after I drain and rinse them.

Another tip I just thought of: My 4 year old helped out with the establishment of our garden this summer and her participation turned into apreciation for the veggies she so tenderly grew from seeds. Her favorites have been fresh peas and lettuce.
