Gingerbread Pancakes
2 c. flour
2 T. sugar
2 tsp. baking powder
2 tsp. ground ginger
1 tsp. salt
1 tsp. baking soda
1 tsp. cinnamon
dash of ground cloves
4 T. molasses
2 T. vegetable oil
2 c. buttermilk
2 eggs lightly beaten
In large bowl, combine all dry ingredients. In a small bowl, whisk eggs, oil, buttermilk and molasses. Slowly pour the liquid mixture into the flour mixture and stir until uniform. Lightly grease griddle over medium hat and cook the pancakes about 3 minutes on each side. Serve with hot maple syrup, applesauce and whipped cream or powdered sugar.
