Okay ladies, I need some help here. I bought some buttermilk last week to use in a recipe. Well, it only called for 1 cup of buttermilk, so now I'm left with almost the whole thing. Any ideas what I could use it for? I have a recipe that I'm considering for buttermilk pancakes, and I also have a buttermilk salad dressing.... but I'm wondering if any of you have a fantastic, delicious recipe that calls for buttermilk?
Any suggestions would be very helpful. THANKS GALS!

My Grandma Audrey's Texas Sheet Cake:
(Sorry, it only calls for 1/2 cup of buttermilk)
2 C flour
2 C sugar
1 C butter
1/4 C cocoa
1 C water
1/2 C buttermilk
1 tsp baking soda
2 eggs
1 tsp vanilla
Mix flour and sugar. Boil butter, cocoa, and water. Let cool slightly. Pour over flour/sugar mixture. Add buttermilk, soda, eggs, and vanilla. Pour in greased 9X13 jelly roll pan or cookie sheet. Bake at 350 for 30-35 min.
Frosting:
1/2 C butter
6 Tbsp milk
3 1/2 C powdered sugar
1/4 C cocoa
1 tsp vanilla
Combine butter, milk, and cocoa. Bring to a boil. Cool. Add vanilla and powdered sugar. Mix well. Frost cooled cake.
I LOVE her cake so much I named my daughter after her! :)
I like to use Buttermilk instead of egg when making breaded chicken, Mike and William love it. The buttermilk give it an extra tang and is better for you then using egg.

I don't think I've ever bought buttermilk before but Rachael Ray made something that looked good with buttermilk. I think it was called Bucket Of Chicken with ranch dip and it used a lot of buttermilk! It shouldn't be hard to find on her website.
Is it dried buttermilk that you've made up? If so that is supposed to keep in the refrigerator indefinitely. I'm guessing it isn't but just in case...
